Pickled tomatoes

Ingredients
3 firm tomatoes
1 small white onion
75ml water
150ml white vinegar
37g caster sugar
18g sea salt
2 cloves garlic
6 black peppercorns
1/2 bunch dill

Method
Slice the tomatoes in half lengthwise, then slice each half into 3 even pieces. Peel and finely slice the onion.
To a small saucepan, add the water, vinegar, sugar, salt, garlic and black peppercorns. Place over a medium heat and stir until the sugar and salt have dissolved.
To a clean jar, add the tomatoes, sliced onion and dill then pour over the pickling liquid while still warm. Seal the lid and store in the fridge until ready to serve.
Best enjoyed after 24 hours.
